Pork Salami Metsovou with Sage is made from 97% premium Greek black pig meat and naturally aged giving it its deep, and refined flavors. It is an original product of Metsovo, the home of the authentic charcuterie and its recipe includes the infusion of dried sage, black pepper, and other selected natural spices. It is the good composition comes from the dried sage and the rich spiciness from the pepper. The slow-cure technique works the same way as the normal marbling of black pig meat, which is enhanced by it, allowing the strong herbal aroma of sage to braid with the juicy, umami character of meat.
